Whole food/vegetable heavy diet?

I’m a single guy trying to alter my Diet from the good ole traditional american diet to center around a lot more whole foods - and especially the inclusion of veggies which have become almost non existent lately. I work a lot of hours, so I don’t have a lot of time to spend in the kitchen which only complicates matters.
Does anyone have some suggestions, or a good website/reference site/community for ideas on more everyday sort of vegetarian/meat-light cooking?
stir fry - just buy rice or egg noodles.. throw them into a wok with a dash of oil and add whatever veggies you want usually i add beansprout, carrot, onions, leeks, and then some hoisin or soy sauce but if you want it spicy go ahead and add whatever you like
veggie bakes - meat and veggies mixed lightly with white sauce under a bed of mash and bread crumbs baked until it’s brown serve with gravy
rice dishes - boil rice or fry it (use a wok because it doesn’t take much oil so it’s healthy) add in peas and finely diced pork you could have it with chinese, indian curry sauce, jamican curry goat or you could make rice with coconut milk which is nice
stuffed peppers or potatoes - add whatever you like meat veggies a little philladelphia cheese etc
spaghetti/pasta dishes - you can always switch up the sauces and ingredients like olives, fried onions, spring onions, mushrooms, etc
stews/soups - to thicken it just put all the ingredients together in a big sauce pan and add milk, a little reduced cream and blended potatoes
*for small snacks there’s always things like..
-tuna pasta - boil it let it go cold add you tinned tuna with mayo or salad sauce now dice up cucumbers and avocadoes and you’re done or also include sweetcorn
- garlic chicken (burgers) - get your chicken slice it, make a batter (eggs milk flour) add bread crumbs coat your chicken, cook it once it’s done use garlic butter (crush up garlic add to butter melt it) to butter your bread and open the chicken and add it inside now add your lettuce etc and sauce
- don’t forget there’s always pitta bread or tortillas that you can fill with hot sauce, mayo, avocadoes, pepperoni, mushrooms etc then heat it and you’ve got a healthy twister wrap or quick snack
