Zucchini, spinach, and carrots make this easy soup super nutritious.

Prep Time: 15 minutes
Cooking Time: 9 hours
Difficulty: Easy

Ingredients:
  ● 1/2 medium head cabbage, cut up  
  ● 3 small zucchini, peeled and diced  
  ● 3 medium garlic cloves, peeled and minced  
  ● 1/4 tsp dried basil
  ● 1/2 tsp black pepper
  ● 1 pinch salt, to taste  
  ● 1 cup vegetable juice, low sodium (or tomato juice)  
  ● 2 tbsp tomato paste
  ● 2 tbsp onion powder (optional)
  ● 2 cup fresh chopped spinach, washed well and chopped (or beet greens)  
  ● 1 small carrots, fresh, 5 1/2&#34; long , peeled and sliced  
  ● 1/2 tsp sweetener (sugar substitute)
  ● 3 cup water (up to 4 cups)

Directions:
1 Place all ingredients into a Crock Pot and cook on low for 8 to 10 hours, or on high for 4 to 5 hours. If the results are too thick, add water to your liking.

Additional Information
