Read labels on everything that you like, measure or weigh foods to get accurate calorie counts and then make your own menu. However, carlories is not the main problem, it is carbohydrates.
There is no generic menu because the amount of a carbs that a person with diabetes can eat per meal can vary dramatically. Some eat very few carbs per meal and some 30-45 carbs per meal (or even more depending on their medication and activity levels etc). It is best to work on this issue with your doctor or request a referral to a nutritionist.
Weight Watchers may be a good option for you and/or your husband. They have a low carb option, and the plan is all about reducing caloric intake. or consider the Atkins, South Beach or Sugar Busters diets for other low carb diets, however, some of these are quite restrictive and can be rather high in fat.
References :
several options: contact your local hospital, they will give you a sample guide for living with diabeties. Even already have it portioned out on the list as to serving size, and how your choices should be spread out nutritionally. or try a search online like the one below. theres lots of menu ideas as well as guides available. http://diet.lovetoknow.com/wiki/Diabetic_Diet_Menus
References :
http://diet.lovetoknow.com/wiki/Diabetic_Diet_Menus

I have tried every diet known to man but nothing worked as effectively as acai berry. I appreciate they say that pills won't work, however they certainly worked for me, and they have been featured on the Rachael Ray Show too. There's a free trial happening at the moment at http://rds.yahoo.com/**http%3a//leping.thefatburn.info , why not check it out, what have you got to lose?
